Time-out Thursday - Kate's Kitchen

As many of The Pink Heart Society's readers already know, one of the lovely Kate Hardy's passions is cooking. She thinks food is sexy and many of her books feature edible yumminess you can make at home. This week, as we get the kids back into their school routine (Yay!) and ease our way into the new schedule here at the PHS, Kate brings us a tasty and healthy recipe for cottage pie. Yum!

So it’s the start of the new term in the UK, the leaves are starting to turn… and I start thinking about autumnal foods.

One of my favourites is low-fat cottage pie with a bit of a twist. In other words, it’s not the traditional beef and carrots in gravy with mashed potato filling! It’s also nice cold, the next day, with salad. So, y’know, if the days suddenly turn summery again…

Here's what you'll need.

Ingredients (for four)

1 large head cauliflower, cut into florets
1 tbs crème fraiche (optional)
500g lean minced beef (ground beef)
1 red pepper, seeded and diced
1 medium courgette (zucchini), topped, tailed and diced
250g mushrooms, wiped and sliced
400g tin chopped tomatoes in juice
1 stock cube, crumbled
grated cheese (optional)

Method:

Steam the cauliflower for about 25 minutes or until soft, then mash it and set aside. (You can add a tablespoon of crème fraiche at this point – makes the topping a little smoother.)

Meanwhile, dry-fry the mince in a large pan until browned, then drain off the fat.

Add the remaining ingredients, bring to a simmer and cook for about 30 minutes until the sauce has reduced and the veg are cooked.

Transfer the meat and vegetables to an oven-proof casserole dish, then top with the mashed cauliflower. Add a little cheese on the top, if liked.

Cook for 30 minutes at 180 degrees C and serve with plenty of veg.
