Kate's Kitchen: Firework Fajitas!

It’s bonfire night in the UK, which usually means sausages, jacket potatoes, and parkin (sticky gingerbread). But another great party food with a sizzle is fajitas!

8 flour tortillas
500g boneless chicken breasts, cut into long thin strips
juice of half a lime
1 tsp cumin
1 tsp coriander
½ tsp chili powder
1 tbs olive oil
1 yellow bell pepper, deseeded and sliced into long strips
1 red bell pepper, deseeded and sliced into long strips
1 red onion, skinned and cut into wedges

To serve:
Shredded lettuce, salsa, half-fate crème fraiche, chopped avocado

Put the spices and lime juice in a bowl, toss the chicken breasts in the mixture and leave to marinade for a couple of hours in the fridge.

Heat the oil in a wok or large frying pan, add the onions and peppers and fry for a couple of minutes (add water to stop the veg sticking).

Add the chicken and continue stir-frying for four or five minutes (until the chicken is cooked through) – meanwhile warm the tortillas.

Put the tortillas on a plate, the chicken and veg in a bowl, the side dishes in separate bowls, and let everyone help themselves. Enjoy!
