Deadline Recipe: Greens and potato soup.

Back in June, Michelle Styles did a gentle cleanse and ended up creating this soup. It is very simple but nourishing.

The amounts are all approximate.

One thumb sized bit of ginger sliced
About 2 tablespoon fresh tumeric (you can use dried but about 2 tsp)
Onion diced
3 medium white potatoes -- peeled and diced
1 sweet potato -- peeled and diced
Optional: 1 chile if you like your soup hot.
Place above in cooking pot, add water (about 1.5 litres). Cook until potatoes are soft (about 15 min)
A large bunch of mixed greens ( I used sorrel and swiss chard with a little rocket because that was what I had in my garden) You could just use spinach.
Wash and chop greens. Add to pot, cook until wilted. (about 5 min)

Blend the soup. Add salt and pepper to taste.
It is very filling but full of wonderful nutrients as well as tasting good.
