Kate's Kitchen: Mango Sorbet

We’ve had a bit of a heatwave in the UK this month. So my recipe’s for something really cooling – mango sorbet.

2 large mangos
150ml water
150g icing sugar
juice of 2 limes

Peel and dice the mangos (the easiest way is to cut the cheek off the mango, score it on the flesh side, then turn it ‘inside out’ so you can cut off the flesh easily) and place into a blender.

Add the water, sugar and lime, and blend until smooth.

Pour into an ice cream maker and churn for 30 minutes (or pour into a freezerproof dish, place into freezer and stir it every 30 minutes or so to break up the ice crystals).

Kate’s latest Medical Romance, A Date with the Ice Princess, is still available in the US, UK and Australia. (This is the one with the rock star’s daughter and the thrill-seeker… and there might be a bit of ballroom dancing in there, too!) And in the US you might be able to get hold of her new Romance, Bound by a Baby (though you’ll have to wait until January in the UK). You can find out more about Kate and her books on her website (http://www.katehardy.com/) and her blog (http://katehardy.blogspot.com/); find her on Facebook at http://www.facebook.com/katehardyromanceauthor
