Kate's Kitchen - choc chip cookies

Last week was my daughter’s birthday, and one of the recipes I always make for our family parties is this one for choc-chip cookies. (I have to make enough for people to take a doggie bag home, too. And there are texts and emails to remind me, beforehand.) It’s a very, very easy recipe. They’re not that pretty (they look more like rock cakes) and they don’t spread like regular cookies, but the taste… Put it this way, people will beg you to make them!

• 8oz butter, room temperature
• 4oz white sugar
• 8oz light brown soft sugar
• 2 eggs
• quarter teaspoon vanilla essence
• 18oz plain flour
• 1 tsp baking powder
• 2 packets choc chips (white ones are really nice!)

Preheat oven to 180 degrees C.

Cream butter and sugar together.

Beat in eggs and vanilla essence.

Stir in choc chips.

Add flour and baking powder; beat until smooth.

For best results, refrigerate the lot for 1-2 hours. (But you can put it straight into the oven and that’s fine.)

Put dessertspoons of dough onto a baking tray lined with foil, leaving 2 inches between.

Bake for 10-12 mins, or until golden, and allow to cool on a wire rack.

Once a Playboy, which is the follow-up to Dr Cinderella’s Midnight Fling, is still available from the M&B/Harlequin websites and on Kindle. Kate’s next release is her very first Harlequin Romance, but you’ll have to wait until February for it!
